Savory Crepe Recipe

This is a basic savory crepe recipe which can be added to and changed depending on your taste. They always remind me of my childhood for some reason. I remember eagerly waiting for my mother to finish cooking one and then I would take it straight off the frying pan, squeeze some orange juice on it, roll it up and then devour it. So simple and so tasty. I still love plain crepes with fresh orange juice squeezed on them.

The crêpe or crepe is French in origin but most countries have their own spin on them. In the United States they might be called pancakes, in Turkey akıtma, in Germany pfannkuchen, in Sweden pannkaka, in Hungary palacsinta and most other countries will have a version of the crepe.

I find that using a soup ladle or a large spoon helps with pouring the right amount of batter onto the fry pan, making them all the same size.

Unlimited possibilities: a pile of crepes. These babies can be filled with anything from orange juice to creamy mushrooms!

Quick and easy. Not to mention tasty and cheap! Probably not as healthy as a bowl of salad, but as Bart Simpson once said, you don’t make friends with salad! 😉

Savory Crepe Recipe

Crepes are a great way to use left overs. I fill them with bolognese mince, Indian curries, Mexican bean dishes and all kinds of other things.
Ingredients
  • Eggs 3 large
  • Plain flour 1 cup
  • Milk 2 cups
  • Salt 1/4 teaspoon
  • Cooking spray
Instructions
  1. Combine the milk and eggs, using a whisk.
  2. Sift the plain flour and add the salt, milk and eggs mix, whisking very well. You could also just add this whole mix into a food processor if you don’t feel like getting physical with the whisk. You can then let the mixture settle for an hour or so but I rarely do and they still turn out fine.
  3. Heat a frying pan with a medium heat and spray it with the olive oil can. You can use butter if you wish. Then using a ladle to scoop out enough batter mix, pour it onto the frying pan and maneuver the mix around so it covers the base. When the edges start to brown after a couple of minutes, turn the crepe over and do the other side. Continue until all the mixture is gone.
Notes
This mixture will make between 8 and 12 crepes, depending on the thickness and the diameter of your crepes. This recipe is a starting point as you can then fill them with almost anything you can imagine.
