A banana cake is a great excuse for not throwing away your old brown bananas. So rather than feeling guilty about throwing away old bananas, you can feel guilty about eating three big slices of delicious banana cake!

Ingredients
Butter 1 cup
Caster Sugar 1 cup
Bananas 2 ripe and mashed
Eggs 4 large and beaten
Baking Powder 4 teaspoons
Plain Flour 2 cups
Milk 2 tablespoons
Cinnamon ½ teaspoon
Icing Ingredients
Icing sugar 2 tablespoons
Cream cheese 125 grams or 4.4 ounces
Orange juice 2 tablespoons
Instructions
Heat the oven to 180 degrees celsius or 356 degrees farenheit.
These are enough ingredients for an 8 inch or 24 cm cake tin. Grease the tin and place some baking paper on the bottom.
Mix the butter and sugar into a fluffy consistency and then slowly mix in the beaten eggs.
Mix in the well mashed brown bananas.
Put the plain flour and baking powder through a sieve and then mix with the milk.
Mix all the banana cake ingredients together and then pour into the cake tin.
Place the cake into the oven and reduce the temperature to 160 degrees celsius or 320 degrees farenheit. Bake for about 1 hour.
Cake Icing Instructions
Add the cream cheese to a mixer for a couple of minutes.
While the cream cheese is being beaten add the icing sugar to the mix gradually.
Then add the orange juice.
When the banana cake has cooled completely, spread the icing mix evenly over the top.
