Date and Walnut Loaf Recipe

This amount was baked in 2 smallish loaf tins. Just halve the ingredients if you're not a gluttonous pig like myself.

Ingredients
  • 120 grams (4.2 ounces) Butter
  • 2 Cups Boiling water
  • 1 Teaspoon BiCarb Soda
  • 2 Cups Brown Sugar
  • 4 Cups Self raising flour
  • 2 Eggs beaten
  • 1 Cup Chopped Walnuts
  • 50 grams (1.8 ounces) Chopped Dates
Instructions
  1. Preheat the oven to about 180 degrees celsius (355 Fahrenheit)
  2. Add the butter, boiling water, dates and bicarb soda to a saucepan and heat until the butter is melted. Stir the ingredients well and set aside to cool.
  3. Add the remaining ingredients and stir well.
  4. This should be enough mixture for two standard sized loaf tins. Pour half in each. They're roughly 9 x 5 inches or 14 x 23 cm.
  5. Bake for about 50 minutes.
  6. Take the nut loaf out when it's cooked and let it cool in the tin for about 5 minutes.
Notes
Try it with some butter and a cup of coffee.
