My two favorite cakes are probably banana cake and carrot cake, which are big calls as I’m a great lover of all things chocolate! They have to be moist though. I have only made this banana cake recipe a couple of times, so I would like to think that it will improve as I make it a few more times.
I started with a recipe from a book by Tom O’Toole of the Beechworth Bakery in Victoria, Australia. I like his recipe book as it has all my favorite cakes and pies from childhood in it.
If I’m honest, and I am, I would have to say that I cooked this banana cake just a little longer than I should have. It still tasted great though 😉
Make sure you let the cake cool down before adding the icing on it or it will melt as you’re struggling to spread it. I know this because I was in a hurry!
Even though I cooked this banana cake for slightly longer than I should have it was still moist inside.
Slice of freshly cooked banana cake and a good cup of coffee. Life is good.. life really is good.
- Butter 1 cup
- Caster Sugar 1 cup
- Bananas 2 ripe and mashed
- Eggs 4 large and beaten
- Baking Powder 4 teaspoons
- Plain Flour 2 cups
- Milk 2 tablespoons
- Cinnamon 1/2 teaspoon
- Icing Ingredients
- Icing sugar 2 tablespoons
- Cream cheese 125 grams or 4.4 ounces
- Orange juice 2 tablespoons
- Heat the oven to 180 degrees celsius or 356 degrees farenheit.
- These are enough ingredients for an 8 inch or 24 cm cake tin. Grease the tin and place some baking paper on the bottom.
- Mix the butter and sugar into a fluffy consistency and then slowly mix in the beaten eggs.
- Mix in the well mashed brown bananas.
- Put the plain flour and baking powder through a sieve and then mix with the milk.
- Mix all the banana cake ingredients together and then pour into the cake tin.
- Place the cake into the oven and reduce the temperature to 160 degrees celsius or 320 degrees farenheit. Bake for about 1 hour.
- Add the cream cheese to a mixer for a couple of minutes.
- While the cream cheese is being beaten add the icing sugar to the mix gradually.
- Then add the orange juice.
- When the banana cake has cooled completely, spread the icing mix evenly over the top.
